Elderberry fruit and flowers are a wonderful herbal medicine. The berries and flowers can be used individually, or combined together, to relieve the symptoms of colds and flu, soothe a cough, reduce a fever, and relieve stomach and intestinal cramping. The berries contain high levels of flavonoids and vitamins A and C, and are a good source of minerals. In addition, medical research is looking into the benefits the berries offer in treating influenza and other viruses, as well as some kinds of bacteria (such as streptococcus and E. coli). Elderberries are rich in flavonoids like anthocyanins, which are stimulating to the immune system; they work by reducing the influenza virus’s ability to spread, so that fewer cells in the body are infected. Kombucha is a traditional fermented drink made of black (or green) tea and sugar. It contains a variety of live cultures, probiotics, vitamins, minerals and enzymes and has been prized by traditional cultures for its health-promoting properties. More specifically, Kombucha is a sweetened tea that is fermented with a SCOBY (a symbiotic colony of bacteria and yeast) to become a nutrient-rich beverage. The fermentation process takes 7-12 days depending on temperature and the strength of the SCOBY. The SCOBY consumes over 90% of the sugar during fermentation, resulting in a low-sugar finished product. This process is similar to what would happen in sourdough bread or milk/water kefir.

Collecting in the garden for dried flowers.
For many years it felt wrong to me to pick flowers. I felt like I was stealing something that wasn’t mine. Lately I realised why that was . The balance wasn’t right. I wasn’t giving enough to Nature and so I unconsciously knew I didn’t have the right to take. But since I’ve realised my place , in service to Her, I can feel her offering gifts of her creativity, her colours and joys to me , and I am deeply grateful .
